Rubio’s Restaurants official committee of unsecured creditors named

Olympia, Wash., Nov. 10 – Rubio’s Restaurants, Inc.’s official committee of unsecured creditors has been appointed, according to a notice filed Monday in the U.S. Bankruptcy Court for the District of Delaware.

The three-member committee consists of Amy M. Williams of Capref Paseo, LLC based in Oakland, N.J.; Joshua Berman of C21, LLC based in Denver and Ernst Bell of Regency Centers, LP based in Jackson, Fla.

Rubio’s Restaurants is fast casual restaurant chain based in Carlsbad, Calif. The company filed Chapter 11 bankruptcy on Oct. 26 under case number 20-12688.
